Shokupan Recipe
Shokupan is a Japanese milk bread. We had been experimenting a few times to get the most satisfying loaf, so hope you’ll enjoy!
Ingredients
- Instant yeast 5g
- Warm water 230g
- Bread flour 340g
- Sugar 30g
- Salt 6g
- Milk powder 20g
- Butter 32g
Steps
- Add instant yeast to a bowl of warm water, and add a little sugar.
- Add all the dry ingredients (bread flour, sugar, salt and milk powder) into a KitchenAid mixing bowl.
- Add the liquid and mix until homogeneous.
- Add butter.
- Use the dough hook attachment and mix at speed 2 for 30 minutes or until dough does not stick to the bowl.
- Cover with cling wrap and rest until dough doubles in volume.
- Grease the bread tin with butter.
- Shape the dough into the bread tin.
- Rest until dough reaches 90% of the height of the bread tin.
- Bake at 200 degrees for 35 minutes.
