Chocolate Chiffon Cake Recipe
Ingredients
- Cake flour 70g
- Cocoa powder 30g
- Egg x5
- Milk 120g
- Sugar 75g
- Vegetable oil 75g
- Vinegar 10g
Equipments
- Oven (preheat at 160, water bath)
- Cake mould 7-inch
Time
1 hour
Steps
- Separate egg whites and yolks.
- [Batter] Mix cocoa powder with oil.
- [Batter] Cook with low heat until fragrant.
- [Batter[ Mix in cake flour.
- [Batter] Add and mix egg yolks and milk.
- [Meringue] Add vinegar into egg whites.
- [Meringue] Beat egg whites till firm peaks.
- Mix meringue into the batter.
- Pour into cake mould.
- Cover with aluminium foil.
- Bake for 60 minutes at 150 degree.
- Remove aluminium foil.
- Bake for 20 minutes at 150 degree.
- Place it upside-down to cool.
Personal Notes
- Water bath technique stabilizes oven temperature, and thus prevents cracks forming in the center.
- Cocoa powder replaces 30% of the cake flour from the basic recipe.
- Cocoa powder requires more liquid hence increases milk quantity.
