Shokupan is a Japanese milk bread. We had been experimenting a few times to get the most satisfying loaf, so hope you’ll enjoy!

Ingredients

  1. Instant yeast 5g
  2. Warm water 230g
  3. Bread flour 340g
  4. Sugar 30g
  5. Salt 6g
  6. Milk powder 20g
  7. Butter 32g

Steps

  1. Add instant yeast to a bowl of warm water, and add a little sugar.
  2. Add all the dry ingredients (bread flour, sugar, salt and milk powder) into a KitchenAid mixing bowl.
  3. Add the liquid and mix until homogeneous.
  4. Add butter.
  5. Use the dough hook attachment and mix at speed 2 for 30 minutes or until dough does not stick to the bowl.
  6. Cover with cling wrap and rest until dough doubles in volume.
  7. Grease the bread tin with butter.
  8. Shape the dough into the bread tin.
  9. Rest until dough reaches 90% of the height of the bread tin.
  10. Bake at 200 degrees for 35 minutes.
